Whistler’s Bearfoot Bistro And Le Saint-Amour Team Up To Salute Quebec City

In a salute to Quebec City’s 400th anniversary, award-winning Executive Chef at Whistler’s Bearfoot Bistro, Melissa Craig, has been invited to share the kitchen at Le Saint-Amour, one of Quebec City’s favourite restaurants. From July 18th to August 1st, diners at Le Saint-Amour will experience a menu that brings a taste of the west to each dish, combining the expertise of two of the country’s top masters.

Together with Le Saint-Amour Chef de Cuisine, Frederic Boulay, Melissa Craig has added a west coast flavour to the delectable menu infusing each dish with fresh, seasonal ingredients from the west coast.

Melissa Craig, who won the coveted gold award at the Gold Medal Plates Canadian Culinary Championships for 2008, describes her style as modern Canadian cuisine – a unique blend of west coast and international ingredients. Her presentation is immaculate and exudes simple yet passionate artistry.

Melissa Craig:

Just 28 years old, Craig is a driven and talented young chef, with an already star-studded career. Graduating from the Culinary Arts Program at Malaspina University College, she went on to be the first Canadian female to win the National Apprentice Competition. Melissa completed her apprenticeship at Sooke Harbour House, where she refined her understanding of west coast Canadian cuisine, inspired by the foods of indigenous peoples, the ocean, and the rich soil of the Pacific NW. Today, heading a team of 20 in the electrifying show kitchen of the Bearfoot Bistro, Craig’s style is best described as modern Canadian cuisine – a unique blend of west coast and international ingredients, immaculate presentation and simple yet passionate artistry.
